Ol Istria Istrian Bjelica extra virgin olive oil is a favorite olive oil obtained from an autochthonous Istrian variety that gives a recognizable oil with a fresh smell of green olive fruit, very harmonious with balanced fruitiness, sweetness, bitterness and pronounced spiciness. The fruit of the Istrian white tree is golden green when fully ripe. The oil content in the fruit is around 21%, which depends on a number of factors. Due to its large fruit, this variety can be preserved as a green olive, i.e. this is a dual purpose variety. It goes well with the typical Istrian frittata of asparagus and prosciutto, grilled vegetables, various pastas with vegetables, salads, and is especially noted as the crowning glory of chocolate desserts.
