Spin Istrian cow cheese with truffles combines two important Istrian traditions - cheese production and truffle hunting. It is made from milk and truffles from Istria, using the same technology as Istrian cow cheese, with the addition of black truffles (1%) and truffle-flavored olive oil, and it is aged under special conditions. The straw-yellow rind, interspersed with small pieces of black truffle, makes the cheese easy to slice, and its taste and smell are specific to cow's milk and truffle. The interior has a soft and elastic structure, while towards the rind it acquires the contours of mature cheese, being somewhat crumbly and buttery. The cheese is fatty, rich in flavor with characteristics of sheep and cow milk, and somewhat sweetish. It melts easily in the mouth.
