Jelenic Istrain Sausage Uganj or Salsiccia tradizionale istriana, is well-known dry cured meat product used since time immemorial as a major source of sustenance by all the inhabitants of Istria. The Istrian sausage is a preserved dry-cured meat product derived from bulk minced pork and seasoned with solid pork fat, sea salt, pepper and garlic cooked in Istrian Malvasia. After a month of drying, it becomes a premium culinary delicacy rich in flavour and aroma.
